How I spent my weekend, or … “The Tale of 3 apples.”

Like many people with disabilities, I rely on Instacart to make my groceries. Mostly this is pretty great, I have access to label information and cooking directions on most products via the app, however… sometimes things go horribly amiss. I decided to order some apples to put in my lunches for the week and got 3. Only when my order arrived, instead of 3 apples, I had 3 five pound bags of apples for a total of 15 lbs of apples…. I am only one human in this house and I can’t eat 15 lbs of apples without provoking a major gastronomical incident, so… I decided that I’d need to turn those apples into something else.

I used about half a bag, some sugar and a bunch of various spices to make about 2.5 cups of very delicious apple butter. I used my crockpot to cook down the apples and then the whole mess went into my vitamix after about 8 hours. I didn’t even peel the apples and the vitamix did such a good job you can’t even tell.

I’m about to chop up another half a bag of apples for making into apple chips in my food dehydrator, and tomorrow I’ll take another half a bag and some raspberries to make blushing apple sauce.

All of this cooking reminds me that I don’t actually have anything on which to spread said apple butter or apple sauce and thus tomorrow I’m also going to be making biscuits or bread or something.

And to think I’d planned on a quiet weekend with no cooking, just enjoying this sudden cool front and time on my porch with dogs. Now, because of a mistake and 15 lbs of apples, I’m going to be kept very busy.
